Steak au Poivre – Paris Pepper Steak

Every region of France has it’s specialty. Bretagne (Brittany) has crêpes. Bourgogne (Burgundy) has Beef Stew. Savoie (in the Alps) has fondue. Paris has steak and fries. scroll down for the english recipe

Prendre du filet de bœuf, ou à défaut : Faux filet ou steak très tendre, relativement épais
Saupoudrer la viande avec du poivre à steaks (en bouteille au super marché)
Dans une poële, faire fondre une noix de beurre ; y faire frire les steaks des deux côtés selon les goûts de chacun : très saignant, saignant ou à point.
Poser les steaks sur une assiette.

Dans le beurre de cuisson, verser une petit verre à liqueur d’alcool (calvados, cognac ou armagnac)
Faire réduire. Y ajouter un peu de viandox et une cuillère de moutarde.
Verser un peu de crème fraîche et bien mélanger.
Ajouter la sauce sur la viande et servir.

Start with a relatively thick cut of steak like in the picture.
Sprinkle with coarse-cracked-black-peppercorns.
Melt a dab of butter in a frying pan and seer the steak two minutes on each side for medium-rare, more or less according to your tastes. Don’t prod your cattle. Let the steak sizzle one each side once without much moving and poking.
Place the steaks on a serving platter while you make the sauce.

To the fresh juices in the frying pan add a half-cup of liqueur to deglaze the pan. My French friends recommend calvados, cognac ou armagnac.
Reduce. Add a spoonful of soy sauce or your favorite steak sauce and a spoonful of dijon mustard.
Then add a dollop of crème fraiche (substitute sour cream if you need to). Stir until smooth and creamy.
Heap generous amounts on top of your steak and serve.
