Gluten Free Chocolate Chip Banana Oatmeal Muffins

2.5 cups (140g) old fashioned oats
1 cup (280g) plain greek yogurt
2 eggs
3/4 cup (160g) sugar or the sweetener of your choice (I used half white sugar and half mascabado brown sugar)
2 tsp (11g) baking powder
2 bananas
one bar (100g) of baking chocolate

Preheat oven to 400°F (200°C). Generously oil 12 muffin tins.
Start by pulverizing half of the oats in the blender.
Add the yogurt, eggs, sugar, baking powder and bananas and blend until smooth.
Stir in the rest of the oats and the chocolate chips with a wooden spoon.
Divide batter among 12 muffin tins and bake for 15 minutes.*

*Don’t take them out too early or they will fall like mine did!
