Pizza Soup

6 servings

1 lb (400 g) sausages

14.5 oz tomatoes
2 (8 in / 20 cm) zucchini / courgette
1 onion
1 green bell pepper
1 cup (12 oz) sliced fresh mushrooms
14.5 oz beef broth
16 oz can pizza sauce
1/2 tsp herbs de provence or pizza seasoning

GARNISH *optional
shredded cheese
sour cream

In a medium saucepan, combine onion, sweet pepper, mushrooms, zucchini, and 1/4 cup of broth. Bring to boil. Reduce heat, simmer covered for 5 minutes.

Fully cook the sausages and thinly slice.

Stir in the remaining broth, the undrained tomatoes, pizza sauce, sausage, and seasoning. Simmer for 5 to 10 minutes more or until the vegetables are tender.

Dollop sour cream on each serving and top with cheese.

1 bag tomatoes
1 bag zucchini / courgette
1/2 bag onion
1/2 bag mixed bell peppers
1/2 bag sliced mushrooms
1 C bone broth
1 can tomato paste
1/2 tsp herbs de Provence or pizza seasoning

2 lb (800 g) ground saussage
Sauté high – until browned

1 bag tomatoes

1/2 bag onion

1 L (2 C) bone broth
1 can tomato paste
1 tsp herbs de provence or pizza seasoning
