Fresh Peach Pie From Scratch – Tarte à la pêche maison

This recipe comes straight from peach country!

Fresh Peach Pie From Scratch

1 homemade pie crust already baked

4 fresh peaches

3/4 cup sugar

3/4 cup water

1 pkg peach jello

3 tbsp cornstarch

1 tub CoolWhip

 

Peal the peaches and cut them in bite-sized chunks.

Simmer the water and sugar for three minutes.  Stir in the jello and heat gently until it dissolves. I use the rub method: rub the mixture between your fingers, if it feels grainy keep stirring.  Whisk the cornstarch into the mixture a little at a time constantly keeping it moving to avoid clumping. Continue simmering until transparent. Toss the peaches into the mixture to coat them thoroughly. Pour into an already baked pie-crust.

Refrigerate 2 hours.  Layer the entire tub of CoolWhip on top just before serving.
