Cauliflower Gratin

This season our family is rebalancing our nutrition. Did you know that eating alternative non-meat protein at the evening meal promotes deep renewing sleep? Also it’s helping our bodies get strong and healthy so I’m constantly looking for recipes that are HFLC, alternative protein, AND that my eight year old will LOVE! This one is pure gold. Hope you enjoy it as well.

HFLC, Paleo, Keto, alternative protein

  • I k (2 lbs.) Cauliflower
  • 150g (12 oz) Lardons (bacon) *omit for vegetarian diet
  • 250g (1 C) Crème fraiche (sour cream)
  • 250g (1 C) Heavy cream (Crème liquid épaisse)
  • 150g (½ C) Shredded cheddar cheese, or cheese of your choice.
  • 1 TBSP Parsley
  • 1 tsp Garlic
  • 1 tsp Sea salt
  • 50g (½ C) Fried onions *omit for wheat free diet

Steam cauliflower. One cup water.
InstantPot manual 1 min. high, sealing, quick release.

Cook lardon. Line XL gratin baking dish with parchment paper, 210°C, 15 min.

Set lardon aside, but keep bacon parchment paper in pan for later.

Use lid to strain cauliflower water and in the same pot add the Crème fraiche, heavy cream, cheese, parsley, garlic and salt. Fold gently until homogeneous. Careful not to break the flower heads or you’ll have purée.

Pour into the baking pan already lined with parchment paper.

Sprinkle bacon and fried onions on top.

Bake 180°C, 15min.
