This recipe is born out of a dream. Literally I woke up one day and decided to attempt to recreate in real life something I had been imagining in my dreams.
Sun Kissed Chicken – Light And Healthy Tropical Orange Chicken
2 chicken breasts
1 tbsp olive oil
1 tbsp peppercorn blend*
2 tbsp chicken broth
3 sprigs cilantro (1 tbsp of frozen chopped cilantro)
1 lb (500 g) mashed potatoes
Cook the asparagus and mashed potatoes and begin the chicken at the last minute.
Thinly slice the chicken breasts and sauté them on low in a large saucepan with the montreal steak seasoning in the olive oil.
Zest the lemon and the oranges directly into the saucepan and then juice them and add the juice to the chicken.
Add the chicken broth and cilantro. Serve immediately when the chicken is cooked thoroughly.
